There is absolutely no word on whether those formats will ever arrive to xbox 360. There is certainly no word about mkv or .264 files. But maybe they might release some sort of HD format compatibility, but thats just pure speculation! Sorry!
I have a Mac, and to convert HD files such as MKV/.264 I use Quicktime 7 pro (less than £10.00 or something I cannot remember) and MKV Merge (Free) which Splits the files to 4GB, then I convert them to MP4 using Quicktime 7 Pro. Rather than Quicktime 7 Pro, you might find iSkysoft Video Converter which has an Xbox 360 option. Unfortunately I don't know much about ripping Bluray DVDs
