Monster Hunter 3 on the Wii was just a knee jerk reaction to poor initial PS3 sales. If Capcom had known the PS3 wasn't dead on arrival, I'm sure they wouldn't have scrapped all their work and started anew on the Wii. We can pretend that Capcom sees the Wii as more than a second class system, but the truth is the Wii was their "Plan B".

Actually, their knee jerk reaction was to make their ps3 titles multiplat ps3/360, like Devil May Cry.  Monster Hunter was the only franchise that moved to Wii, and given Monster Hunter 3 was (re)announced for Wii by Iwata himself, I think we all know the real reason Capcom made such a decision.

Outside of Zack & Wiki, I haven't seen much evidence that Capcom has any interest in making a serious effort on the Wii when they aren't working directly with Nintendo.
