I love hearing whose virtual racket is making contact with the ball in a 4-player round of Wii Sports Tennis. I also loved the "secret sound" in Twilight Princess coming out of my hand. The phones in Red Steel 1 and No More Heroes 1 were awesome too, and the chainsaw in MadWorld. It was even cool as a geiger counter in one of the crappy minigames in Rayman Raving Rabbids. More people should use it in clever ways.
It's a great way to use some really cheap tech to add just another small layer of immersion. Nintendo's always been great at thinking sideways like that.
