I don't know how often you frequent a gym, but vitality sensors can take the place of a strip of metal, so a nunchuck with a receptor on the finger grip or the palm would work jsut as well without having to hold your thumb down on the stick.

Treadmills and loads of other machines have biometric sensors on the grips.

But it would require a special nunchuk to be sold, I don't know whether Nintendo is disposed to do that.
