The potential is there for all sorts of other interactive stuff that non-gamers would be interested in depending on how good and accurate the device is.
For Example
Yoga/fitness/tai chi training where it can actually comment on your positions
handsfree TV remote control, no more lost TV remote.
Interactive Karma Sutra instruction 
those are just a few i could think of quickly, I am sure others with more imagination can come up with a lot more. In the end it all comes down to how well the device works and how well MS market it to alternative untapped audiences.
