Away from that, I really not digging the massive lack of challenge in this game. I -just- got control of who is in my party, not sure what chapter I'm on (8 or 9?) and so far I've beat every boss without trouble.

Just wait for the boss on Chapter 9.

You will be challenged

 I have no idea what chapter I am on, game doesn't make it very clear when you advance chapters.  I just beat The Pimarch/Fal'Cie and I think this is what you mean.  He killed me first time with his mega weapon in the final part, I was hoping it was a single attack and he just go for my sentinal, but it wasn't.  Once I knew that I beat him second go since I just made sure to fill team leaders health before he fired.

I'm really not finding this anywhere near as challenging as I did FF XII.

Yeah that's the one some people were having difficulties on.

To find out what Chapter you are on just simply visit the Datalog on the Menu, it's under "Events".

Gran Pulse is also quite challenging (and huge) 

especially when those random birds swoop onto you

or when I "accidently" ran into the HUGE ADMANTOISE!
