Not just planets, any land mass really. And having multiple centers of gravity makes you literally think differently about platforming, it's really a great concept that gets directly to the heart of the genre. And really, it's just a core component in a game that's loaded with interesting little gameplay segments and new things.
As for why more 3D platformers haven't done it, well, the genre's pretty dry in general to be honest. If this were the mid 1990s again, I'm sure you'd see tons of copycats (as you did with Mario 64). At this point, Mario's pretty much the only AAA 3D (pure) platformer left though.... everyone would rather make another fps instead or some shit. :/
