F1 championship made it look like you were watching TV.
In Assassins Creed when I rode just to Dalmascus, and saw the whole city of the cliff my jaw dropped, although that was not just the graphics but the scale of it. (it looked even better when my horse reared)
The daddy of all of these is of course Uncharted, especially the water effects. When I played the demo (chapter 4) and got to that waterfall, it was the most beautiful experiences in gaming ever.
Also the Final Fantasy (X, X-2, XII + KHs) FMVs, although I suppose they don't count because they are not in engine
