Yeah it shits me when people say its way too easy, sure maybe to get 60 and have the boss battle. But to get all 120 stars can be lesson in frustration. Once you have 100 stars, this game is a ball breaker.

same here, how can you judge the games difficulty by the first half of it, when in almost all cases in gaming, games get progressively more difficult

Huh? I got 120 stars, and it was incredibly for me to do so.  (Took only 20 hours I and I wasn't even trying to beat it quickly).  I'm in the process of going through the second play through and while it is more difficult its still extremely easy for me (currently at 55 stars) but I don't have nearly the same motivation to play since I can still remember most of the stars.  Why the heck are you assuming that those calling the game too easy haven't gotten 120 stars?

Furthermore, if your talking about GOTY how can you not consider the lack of difficulty options to be anything but a drawback?  Most titles now have difficulty options even when all those options do is double, triple, or quadruple enemy HP (such as MP3).  Other games put more effort into difficulty options and actually improve enemy AI or otherwise significantly increase the challenge (such as Halo with its options and skulls). Granted, AI and enemy HP aren't big factors in the platforming genre, but why can't I unlock the ability to freely apply prankster comet properties such as double enemy speed or daredevil to any stage I choose?  While I don't think the paucity of difficulty options is a significant drawback (SMG is still my favorite game for this year), I don't see why so many people are trying to pretend as if it doesn't exist.
