Because Mario games have a unique and special feeling to them.
I mean, trade anything Mario for any relatively unknown franchise and the result would still be a good game, but with lower scores, lower sales, more critics etc.
The same goes for other game franchises like FF, Halo or almost any hit on the entertainment industry. You don't need to be a philosopher to perceive that.
