If you don't want to melee them, Firestorm or any kind of Fire Spell works great since they are weak to fire. |
I used up my Dragon God soul to get Fireball... I'm stupid in so many ways... 
Anyways, dodging isn't that much an issue to me, I wear Old King's armor and with 25 endurance and 22 vitality, I'm very fast moving. I also made a Purple Flame Shield +9 as you suggested, it rocks!
