Well, to know how many souls you need to level up, you'll have to talk to the Maiden in Black, she'll show you how many do you need.
And I agree about the Inventory screen, the first 20 hours in the game I dreaded that screen, even with the manual, it was confusing as hell, but eventually, you'll get the hang of it ;)
