I think it's just a case of shifting demographics. Mario Galaxy may be one of the greatest 3d platformers ever made, but the market for 3d platformers has declined. I think it's mostly the takeover of the teenager "cool" appeal. Platforming just doesn't lend itself to you being a badass dude killing other dudes nearly as well as FPS or brawling games.
If 3D platformers were still a desired genre, with other high quality games out there and not just movie license titles (and the awesome Rabbids Go Home), then there would be a lot more gamers looking to play Galaxy.
