You can do it if you ever need help in any particular stage or boss, but bear in mind that there's a 10 level gap for summoning until you hit Soul Level 60, meaning each Blue Phantom that you summon, will have to be 10 levels above or below you, not more or less.
So probably, you'll be stuck with someone who's just starting the game as well, but with a bit of luck, you'll get someone who's knowledgeable in the game and is just starting a new character.
