Most videogame genres have not seen dramatic improvements from raw processing power in any area except for graphics in (about) a decade. Most FPS are mostly visual and production value improvements over games like Half-Life, DeusEx, and System Shock 2 which were released in the 1990s. The Wii has more than enough processing power to handle great games in most genres.

In many ways the Gamecube and XBox were roughly equal in processing power, with each system having distinct advantages over the other; and, being that the Wii is more powerful than the Gamecube, you have to acknowledge that the Wii is at least as powerful (most likely more powerful) than the XBox. The lack of processing power was never cited as a reason why you couldn’t make great games for the Nintendo DS, Dreamcast, PS2, PSP, Gamecube or XBox which are all less powerful than the Wii so why is it such a problem for the Wii?

 

The problem I have with most arguments people have against the games not being "Successful" on the Wii is that if you look at the sales more than 50% of FPS games on the XBox 360 probably lost the publisher significant amounts of money; and they could have produced multiple Wii games of similar quality that each would have seen similar sales and made a healthy profit rather than producing these forgotten FPS games. My favourite example of this at the moment is F.E.A.R 2 which I bought for $10 in a bargain bin and had higher production values, was of higher quality than any third party effort on the Wii to date, and it received more marketing than most Wii games; and it didn’t even sell 500,000 copies on the XBox 360 even though “everyone” wants FPS games on the XBox 360.

Most publishers seem to be chasing the success of other companies and bleeding money from it, rather than taking the risk and producing something that stands out on a platform. While they may not see the same level of success as the best selling similar games on the Wii, making (so called) "Casual" games for the PS3 and XBox 360 would probably have a better return on investment than releasing the 5th or 6th best mini-game collection this year for the Wii; and in contrast, making a high quality FPS with a well known IP attached to it would probably make more sense than releasing the 5th or 6th best FPS on the XBox 360 or PS3.

 

Edit: To be entirely clear, I don't think games like Call of Duty Modern Warfare 2 or Grand Theft Auto 4 not being released on the Wii is particularly surprising being that these games receive amazing success on the HD consoles and (realistically) have no need for the Wii. What is surprising is that certain publishers will release 6 (or more) FPS for the XBox 360/PS3 knowing that 4 or 5 of those games will lose a lot of money and yet refuse to produce similar products for the Wii.
