Why does Nintendo take that long to make games compared to HD consoles?

Well to be fair, for the most part Insomniac = quality = one year.  It's possible to be quick and good.  Who knows.

Insomniac's on a 2 year cycle for their sequels now (Resistance, R&C).  Which is better than last gen, annual R&C releases almost killed the series on PS2 imo.
