I respect your opinion.
That said, you must certainly realize that the fighting in God of War is much more akin to that of the old school hack n slash games, in that it is relatively shallow compared to other games in the genre.
Many people prefer the shallower combat, and you might be one of those, but if you are saying that the gameplay in Bayonetta is shallower than the gameplay in GoW, then you simply haven't played it enough. There is enough gameplay depth in that game to keep even the most hardened Ninja Gaiden fan busy and calculating for months.
Bayonetta is built around the depth and application of its gameplay. Gow of War is built around the experience of a single-player playthrough. That is the primary difference between the two subgenres, and while it isn't a provable fact that GoW's gameplay is relatively shallow compared to say, Ninja Gaiden of DMC, it's about as close as you can get to one. I'd say that the only hack n' slash that I've played that contains a more simplistic fighting system than GoW is Heavenly Sword, and that is a testament to the genre because despite its relatively depth, GoW still has a reasonably deep combat system.
So, my question is, are you refruting that assertion, or instead insisting that depth wasn't in your argument, and instead you were comparing the two gameplay styles in an apples to oranges comparison, and deciding that you, in fact, prefer apples.
Either way, they are both great games, GoW1 and Bayonetta, and at least you admit that much, I'm sure that personal preference between the two games will vary wildly from person to person, so that should be known before accepting anyone's opinions on the subject. After all...different subgenres.
