The recent Ninja Gaiden aren't even that difficult if you compare them to the 8-bit version. And they're far from button smashing, it has tons of strategy and combo placement to properly master the games ;)

I take it that you don't like difficult games then, so you hadn't have a try at Demon's Souls too?

I'd like nothing more than to buy Demon's Souls. But alas, no European release.

I should clarify: The first parts of the demo, on Normal difficulty, were easy. It's just that final boss fight with the whatever chosen one thingy woman. I couldn't beat her on Normal, and I beat her in 18 seconds on Easy, so there's no "just right" there.

Well, I got lucky, one store in my town had the game ;) (I'm from Portugal)

Well, the easy mode only had you pressing one button to properly pass the game, Triangle on the PS3 if i'm not mistaken (I only downloaded the 360 version since my PS3 is in repairs).

Normal mode actually adds the challenge of action oriented games, so you'll have to learn to properly set up combos and have one finger on R2 to dodge at all times. One suggestion, Aerial combos rock and will allow you faster dodges with more wide space to do it, so you should try that.
