Elder Scrolls is the first thing that poped in my head when he was talking about open world gaming. While Wolf3D invented FPS, I think Quake is more influential. This was many peoples first experience with online FPS's. When QuakeWorld added TCP/IP support those stuck with dial-up could actually achieve playable pings! Oh sure it wasn't as good as those LPB's with cable/DSL but still decent That made it accessible to more and more people and it just snowballed from there - to where we are today.

You might have a point with Quake, I remember playing it with my mates after school. Good times. It was also the first FPS to include fully 3D character models I believe.
