I'm not sure that would be "fresh", as NSMB already did that :P
Since Mario 64 style boss battle wouldn'r make much sense, I think Super Mario World or SMB3 battles would be the candidates, and we've seen Bowser Junior on Super Mario World's bowser "flying thing" (does that have a name?). Maybe we'll have that and a SMB3 style Bowser?
