This will be in the full game.  Read Turn 10's comments on the "bug".

That's the camera clipping through random geometry on the side of the track when you switch to specialized cameras.  They haven't commented on the track vanishing.

The track is geometry.  It appears that the camera is going beneath the track and Forza handles it in much the same way as any game handles cameras going through level geometry.  Lots of FPS games have random times where the camera goes through the floor.  You see the levels in much the same way as what is shown in the pictures in this thread.
