I didn't con him, i just took the really dumb bet he gave for people, and turned it around on him. And as you can see, he didn't like it.

I agree with you on the "dumb" part though.

And backing out from the bet now means i will take nothing he ever says, seriously.

You successfully, but falsely, made him believe that his challenge of 'ok, change anything but the games and I will take your bet' allowed you to make the bet you did.  He wouldn't have agreed if he didn't believe he'd already promised to, which he didn't, because your claim that your bet was in compliance with his terms was wrong. 

Therefore, if you did it on purpose (maybe you didn't and honestly thought you were within his requirements) then you conned him.
