I thought Ninja Gaiden was one of the easier hack and slash games that I've played, but part of that is probably because I think it has the best combat system.  I've never had a shortage of healing elixirs.  I'm actually replaying Ninja Gaiden Sigma right now.  After the first boss (the samurai guy on horseback), I still had a Talisman of Rebirth, 3 Greater Elixirs, and 3 Elixirs.

I'm currently at the bone dragon boss, all my weapons have been upgraded (I just stick with the Dragon Sword though), I have a full stock of healing items (5 greater elixirs, 10 elixirs), 2 Talisman of Rebirth (found, not bought) and 60k in essence to spend, should I ever need to restock on healing items.  Which is rarely because I find so many of them throughout the game.
