Nice suggestions.
So far I think the most obvious ones that I missed were the Brawl level and the Mariokart track.
As far as other interesting suggestions go, I like Buzzi's suggestion of making Wuhu island the setting for Pikmin 3. The scenery might not be so recognizeable up close, but I think it would be fun to have the idea that the game is taking place in different parts of Wuhu island. You could even zoom in from the scenery above as Olimar's ship lands.
