I'm not sure it would make any difference either way.
Look at EA's recent sports games on Wii: Tiger sells great in NA with realistic art, Grand Slam sells great in EU with stylized art, Sports Active sells great in both with realistic.
What's the common thread here? They're all quality projects with unique gameplay elements, and they sell best in regions where their sport is popular. Grand Slam seems to be performing the worst of the three, but it isn't losing to Virtua Tennis' realistic art.
As long as it looks decent, I don't think that sports gamers on the Wii care what style you use.
