For me the one that stands out is Return of the Jedi on the SNES. It's not that it was necessarily that easy but that Empire Strikes back which i owned was just brutal. It took me months to finish Empire on the Jedi difficulty level and then when i hired Return of the Jedi, which had essentially the same play mechanics, i breezed through it in an afternoon, man was i dissappointed.
