Would be a tough fight if they just did Hand to Hand combat, but I consider Ezio would win.

Because I understood he has somekind of a hidden gun. He could suprise altair since during altair's time there wasn't any gunpowder weapons in 1191 AD (china invented them around 1300 AD).
