Viper1 already listed some actions which can be mapped to wimote movements. And I am sure I've had some of those already in Wii-Games.

In Ghost Squad you moved the wiimote away from the screen to reload.

In another game the forward thrust with the wiimote was used as zoom ... just can't remember which game, maybe Red Steel ...

And there was also a game, where a swipe with the wiimote was used as a melee-attack (I think it was a WW2-FPS ...)

This was done really well in PangYa! Golf with Style, where it was used to zoom in and out of the overhead map. You could even use the IR reticle to focus on a particular area as you zoomed.
