My roommate is similar, but with less gaming experience. She was obsessed with Fable II, and when she finished the game wanted to play another game just like it. I've tried a few games, but nothing really clicked with her the way Fable II did. She didn't like JRPGs or traditional WRPGs. (She really disliked the little bit of Final Fantasy VII that she played.) She somewhat enjoyed Prince of Persia, but she found it repetitive and a bit difficult. She doesn't really understand game development cycles either, and can't understand why it's taking so long to release Fable III.
Honestly, I think Zelda-style action-adventure is your best bet. That would include Beyond Good & Evil; maybe Okami. (Haven't played Okami, but I've heard it's very Zelda-like.)
