He's teasing to make people speculate just how different this could be.
He also said (the other day) he's pushing for more swordplay in this game, with other members of the team pushing for more RPG elements.
Perhaps the sword is one of many weapons, and not the main weapon as it has been? Or perhaps the absence in the artwork deals with some part of the plot?
Who knows!
EDIT: Plus, Older Link means late teens early 20's, apparently.
