Off the top of my head, Soul Calibur II had the best extra character, and Burnout 2 had twice as many crash junctions (30 of them!) Also, all the multiplats between GC and PS2 seem better on GC simply by virtue of the Gamecube controller.

Also: no limit of 16 color textures.
