For King Hippo, wait until he steps back to do his double-fist move. When he flashes red, hit him with a hook (I don't think it matters which). This usually knocks his crown off, although the timing's a bit tricky.

 

Wow, I can't believe I never tried that.  Thanks.  I'll knock his crown off later. >:)
