Ignoring your poisoing the well fallacy (anyone who argues his point is a prejudiced bastard!):
It's also a form of analysis; it all depends on how you apply it. If I saw someone who's scrawny and clumsy, I'd assume that they were not an athlete. Is that prejudice? If we limit ourselves to only acknowledging everything we know for sure, we hardly know anything. A simulation strives for realism, and this means realistic graphics. When a game loses that focus on realism in the graphics department, it's only logical to assume it's no longer focused on simulating reality in all likelyhood.
