 Does Yoshi ever lay eggs? He may just have stolen some random eggs from someone he hate, put dynamite in them and throw them away.

Or... He could simply be able to make the shell. As he does with "B" in SSB.

 

 

In SSB he can swollow opponents and lay them as eggs, so he does lay eggs.
