Define more mature. Cause a T rating for HD isn't exactly that much more older then a 10-12 year old lol.
The simplest answer is, tt is like that because it is better for the Wii graphically. Sure they could of gone the same path, but it would of envolved too much screwing around trying to make it look good, and people would always judge it against the HD consoles. By having a different art style it makes it different from the rest, meaning less likely to be compared to HD consoles as it will be a different game in a sense.
Just because it looks more cartoonish doesn't mean an adlt can't enjoy it. Just look at Wind Waker, people bitched about it but after they accepted it because guess what IT ACTUALLY WORKED WELL cell shaded.
