I had no trouble with sheva AI, in fact, she died a lot less than when I had partners.
All you have to do on the boat is bring a couple mines and use the grenades that they drop to clear them away quickly. Really not that hard, even on professional.
Cover makes her stand near you and only shoot nearby enemies that are charging or about to grab you, allowing you time to lineup shots, while she blasts anyone in a 5 yard radius. It works very well. Maybe you just don't know how to play yet?
