If they want to make it cross-platform with the 360 (which would be a good idea, IMO), they would need to pick a diffeent engine, or outsource the port to another studio which may be costly. Given the fact they said they've already chosen an engine, then they are most likely in-contract, and cannot change platforms/engines if there's been a bit of work done, or forefit whatever they've invested so far.

The PhyreEngine implicitly supports 360 development through the PC code. Collin McRae's DiRT used the PhyreEngine and was released PS3/360. There may be licensing issues by porting to the 360, but it can be done.
