HUNK (aka Mr. Death) sure is a lot of fun to play as in Mercenaries. Just shoot someone in the head, press the context button, and BAM! Chiropractic skills. His level was also pretty sweet in Umbrella Chronicles (I know it's not very popular to put UC in a positive light right now, but just go with it).
If you're talking about actual main parts in RE games, then I'd have to go with Meeester Kennedy. "Where's everyone going? Bingo?". Oh Leon, always delivering the lulz.
