It all really depends on the programmers, but as said before, some games do have multiple control options.
I like the fact that some games allow the use of GC controllers, specially for Mario Kart and SSBB. Those games (to me) arent really meant for motion control (IMHO)
I have seen some kids do really well with the Wii Wheel on Mario Kart, but I just cant get used to it, in hence why I dont do alot of the online challenges, cause most of them if not all, require Wii remote use only (least the ones I have payed attention to)
