Regarding the Hitman video, what it does prove is that the PS2 could render that many characters simultaneously, and of course they're all in the RAM (where else?).

The only thing potentially different is AI, and it's pretty obvious that Dead Rising neither requires nor has complex AI, and their behavior is very limited (attack or stay still practically)... Enemies almost only attack you when you're near them, so virtually no pathing is required for instance. Surely you don't believe the Wii can't handle a few dozens of very simple AI instances? Even in the Hitman video the dozens of characters run away when you shoot them, which is about as basic a behavior as attacking the player.
