Perhaps the acceleration could be tweaked a little bit, but right now it's not anything game breaking. I feel as though people are having some sort of weird bug in the demo, are prone to notice this because it feels different, or just want to light the internet aflame by overreacting.

I tend to agree with you.  I have tested this in the demo and do not notice any lag, and the game has responded to every flick of R3.  It has been reported that some people initially experienced this issue were able to resolve it by downloading it again.  There is a youtube video of a guy that is intended to show the lag based upon the gamasutra lag test.  The problem is the guy did the test incorrectly.
