All I know is timing is just fine on Rock Band 2 on HDMI for me.  I played the 6 hour long endless setlist the other day and didn't have a problem.  My calibrations in the game are set to 0 ms, too.

 

Oh, nice, it's hopefully not that then. Do you have any Consoles connected with composite?
