Excellent point. I think the first good example of this will be Spiderman 3. Personally I have a Wii and a 360, and I'm more excited about picking up the 360 version. The city should look gorgeous, and I'm comfortable with the old controls from Spiderman 2. In fact I'm afraid the controls might be a little complex for the Wii version. Nonetheless, I thought the same thing about the Godfather until I saw the video, so if I see a great video of the Wii version of spiderman, and if the Wii version has enough different content, I may pick both up. But more then likely I'll buy one, and rent the other. In case of the Godfather, despite the graphics difference, and even ignoring the controls, there is lots of extras for the Wii, story missions, new moves, the ability to call in a hit squad, another whole mafia to deal with, so there is alot more in this game. Yet another factor is price. Let's say you want Spiderman, but you not in love with it. You may like the idea of better graphics but if the Wii gameplay looks fun, the ten dollar price difference may sell you on the Wii version over the 360/ps3 version.
