If they sell it long enough, yes, plain and simple. Sony will do what it can to make it happen as late as possible, though, PS2 still sells decently for an old console, but at little less than 8million units sold in a year, and slowly dropping, each year more of sales can delay the overtaking only a few months and Sony won't keep it on the market just for this, but only as long as it will make sense commercially.
Anyhow, even if Sony kills PS2 next spring, Wii will need at least another 3 years to reach it.
It will almost certainly happen, as it will make sense for Nintendo to keep alive a console so successful as long as possible, just as it did for Sony with PS2.
A cheaper PS3 will do well, but it's unlikely it will fill the gap with Wii.
