Alien Soldier for the SEGA.
That game was so badass, it was basically ONLY boss fights. In fact in between boss fights there sometimes weren't any enemies or obstacles at all. Also the bosses were all different and very creative. All around best boss collection I have seen ever.
Honorable Mention:
Hive Mind from Dead Space - Sure it was a pussy, but the whole cutscne of it coming out and just everythiing was just so epic.
