They generally port the Ps2 version and add functionally,like waggle ect, Making it a pretty easy ride.
If there is not Ps2 version they sometimes make a version for the wii, then port that version over to the PsP and DS, saving on development costs.
I get this info from, once again, my experiences as a freelance game tester, which is not at all as cool as it sounds.
This all depends on the developer and the game, but hey, now you know, And Knowing is half the Battle....
