I think developers stick to HD because it is much easier to sell pretty looks than quality gameplay. Also I have never had any problem reading anything on Wii. In fact I am pretty sure text in NES were completely readable.

However, I agree 100% that HD movies aren't what they were/are hailed to be.

You don't need HD, but it sure helps! It makes the entire experience more enjoyable.
