I ve always dedicated my life to food. Since the very late 80s and early 90s, food has filled every day of my existence. I still have in my kitchen an electric frying pan, a crock pot, a dutch oven, a cuisinart 16, a cuisinart 64 and 128, a cast iron skillet, many bread knives, a wok, a roux whisk, double boiler, a stick blender and now a stand mixer. I think I can be considered an hardcore foodie..
I must admit that i ve never liked cilantro flavor and all that kind of herbs, but i ve always appreciated some food like salsa and bittermelon.
But now, it is for me impossible to understand why cilantro is eaten so much. I tried and tried againg to understand what's happening in these years but unfortunately I 'm not able to undestand why someone has food with cilantro.
Maybe i'm becoming old (i am 26) but it's hard for me to enjoy myself with a herb with that taste, with those aromatics (i hate cilantro chicken)...and i'm disappointed bacause maybe i'm losing something delicious of this generation.
i'm very enthusiastic of my saucier..I can make some sauces (in this period bechamel, veloute, hollandaise, bernaise) i can smoke salmon (in my cedar smoker it is spectacular) i can eat turducken in my dining room, i can chop onions and julienne all my 5000 carrots on a big cutting board.. Now i'm waiting cassoulet, beef wellington, jumbo lump crab cakes...and i think the future will be brighter..
but when i see my nephew cooking with her cilantro, i still continue to not understand...maybe if I were 7 years old and I lived in the 90s, cilantro would be a fantastic herb...unfortunately almost 20 years have passed.
so what's wrong with me?
