Mass Effect 2 is a different story.  Whereas Bioshock 2 may not directly follow on from the original story-wise, the second Mass Effect almost certainly will.  So EA has an incentive to accept an offer of payment from Microsoft in return for (at least a window of) exclusivity.

I think that 2k now understands how much they damaged the Bioshock franchise by letting MS buy timed exclusivity.  The only reason they released the originial Bioshock on the PS3 is because they want to release the sequel on the PS3.  I don't think the PS3 sequel is in any jeopardy. 

The only reason why Mass Effect 2 would appear on the PS3 is to support EA's multiplatform policy.
