It could very well be a resoultion issue ...
The higher resolution textures on the PS3 and XBox 360 probably have much more subtile shading on them and this becomes washed out at a lower-resolution.
It doesn't surprise me that the Wii verson looks good though; in terms of textured polygons the Gamecube was approaching the practical limit of what could be displayed on a 480p TV; when development resources are put into Wii games it wouldn't surprise me if it was able to pass the practical limit.
